Pork Belly

Tis Cooked - Temp 201 F - Lard Being Recovered

I put this in the pellet cooker at around 10:30 am - I’ve been slow cooking this pork belly - and now I think it is done basically. I left the skin on - I’ve read one place says “sear” it at the end - but I’m not sure I’m going to do that - I think I will just flay it off.

Hope all are well during these tumultuous times.

Peace is what we need - and ironically - peace is actually want most desire - and truly - it is easy.

The pork is most savory - the skin mostly flayed - I’ve given some away to a neighbor and wanted to give more away - and maybe tomorrow I will. I’ve eaten enough of it to know - this is good sustenance - and I saved the lard - and separated it - cause biscuits made with pork lard are really the best…..I remember Baton Rouge - Control Room #2 I think it was - the operators there - they could cook!

Now - three of the containers had material at elevated temperature - can you “tell” - those three are going (or are in now) the freezer - where I hope they form a good seal as the temperature goes down…….

The other three including the rare “meat” not so fatty - goes to the fridge for now.

I’ll tell you this - now I know why they call it - “Pork”…..

It’s Father’s Day - this is my prerogative in Fries, VA where I reside presently.

Oh my - I know the time of this - now sure what to see in the reflection to the sky from the oil from the bork belly collected drip drip into the aluminum shell in the big “cup” - and I see a dog in this image - sort of like the dog checked out my cooking yesterday I hadn’t seen prior - and this dog was just another border collie mainly dog - but this dog and I were smarter compared to the last dog encounter I had in the neighborhood.

The dog was running free but must of got whiff of the pork cooking and came by to check things out - I saw it once and it saw me see it, but it went its way and I finished what I was doing. I wanted to see it again, but thought I wouldn’t, but then as I came to step upon the back deck where the pork was slow-cooking - lo & behold - said dog was there. We gazed at each other.

I said - “come here baby” in a sweet voice and that dog took off!

Hells-Bells in the last dog encounter I had - seems the dog wanted to confront me on my own property - and I don’t respond well to that - this dog was just checking out the status of the slow cooking pork belly - and I can tell already - this dog is a better border collie than some others I know - but that is another story altogether.

As I sense it - there are at least 4 items of one sort of “coloration” but reality is there are more than that - but for the 4 items aforementioned - what is each one?

For an A+ A+ twice - answer this - how many times does the “string” cross over?

Ok - a simpler question easily proven for the image above - what is the longest uninterrupted segment of “string” in the image above - in other words the whole segment is shown in the image. Answer will only be accepted in inches - I mean really - inches as understood in definition - and I know this - the beauty of this question is that it can be literally “proven” - there is a fixed answer - so to keep it simple - whole numbers only please - how many inches?
